Honey stir-fry with udon noodles, spinach and crispy sesame tofu

Stir-frying is a traditional cooking method in Chinese cuisine. Here, vegetables are flash-fried in a Wok or Frying Pan. This makes it possible to create all kinds of stir-fry dishes.

Here, we’ve chosen a vegetarian version with crispy sesame tofu in the starring role. Alongside our Asian favourites coriander and ginger, it really shines. Together with honey and fresh baby spinach, it creates a vegetarian delicacy of Asian cuisine.

Ingredients

200 g tofu
225 g udon noodles
50 g bean sprouts
50 g baby spinach
25 g ginger
1 bunch coriander
1 clove of garlic
20 ml sesame oil
20 g honey
2 tbsp. soy sauce
5 g sesame
4 pieces long pepper
4 tbsp. vegetable oil
1 tbsp. white wine vinegar
salt
sugar

Instructions

Step 1 of 9:

 

Bring water to a boil in a pot for the udon noodles. Cut the tofu into approx. 2 cm cubes. Finely chop the long pepper. Peel and finely chop the ginger. Set aside the coriander tips for garnish, then roughly chop the remaining coriander including the stems. Peel and finely dice the garlic.

Step 2 of 9:

 

In a bowl, mix the long pepper with soy saucegingerhoneygarlicsesame oil, as well as 5 tbsp. water and white wine vinegar. Season with 2 tsp. sugar and salt.

Step 3 of 9:

 

Add the udon noodles to the boiling water with salt and cook for 4 minutes until al dente.

Step 4 of 9:

 

Drain the cooked udon noodles, rinse with cold water, and toss in the pot with 1 tbsp. oil.

Step 5 of 9:

 

Heat 2 tbsp. oil in a Frying Pan and fry the tofu cubes over high heat for approx. 8 minutes until golden brown all over. Season with salt. Then remove the Frying Pan from the heat.

Step 6 of 9:

 

Add 3 tbsp. honey-pepper marinade and toss the tofu cubes in it for 30 seconds. Then remove from the Frying Pan, place in a bowl with sesame seeds, and mix well.

Step 7 of 9:

 

Heat 1 tbsp. oil again in the previously used Frying Pan and fry the udon noodles over high heat for 1 minute. Then add the remaining marinade and fry for another 30 seconds.

Step 8 of 9:

 

Remove the Frying Pan from the heat, add the baby spinach, chopped coriander, and bean sprouts, then mix well.

Step 9 of 9:

 

Serve the honey stir-fry in a bowl and garnish with crispy sesame tofu and coriander tips.
