Low-carb baking: Banana bread

The best New Year's resolutions are the ones you're happy to keep because they taste so good. If you want to cut down on carbohydrates in the new year without sacrificing flavor, we have good news: baking can be healthy and delicious – completely without sugar, butter, and flour. Here's how!
Gluten-free and without added sugar
Banana bread isn't just a delicious baking trend; it's also a lifesaver for those brown, overripe bananas forgotten in the fruit bowl. But these aren't destined for the trash—they're pure gold for breadmaking. Overripe bananas are so sweet that they can easily replace sugar in the baking process. Instead of flour, we use ground nuts—they're low in carbohydrates and gluten-free. We season it with vanilla and cinnamon, and eggs provide an extra dose of protein.
Banana bread isn't just a classic low-carb recipe; it can also be easily and creatively adapted. Nuts, cacao nibs, and goji berries are just a few of the extras that work wonderfully in this bread – it's definitely worth trying.

Ingredients
| 2x | ripe bananas |
| 1/2 cup | ground almonds |
| 1/2 cup | shredded coconut (ground) |
| Handful | almonds or coconut flakes |
| 3x | eggs |
| 1 tbsp | walnut oil |
| 1 pinch | salt |
| 1 tsp | cinnamon |
| 1 tsp | vanilla |
| 1 tsp | baking powder |
Instructions
Step 1 of 3:
Peel the bananas and mash them with a fork in a bowl. Add the remaining ingredients and mix thoroughly until a smooth mass is formed. A hand blender can also be used for this.
Step 2 of 3:
Line a baking pan with parchment paper and pour in the batter.
Step 3 of 3:
Bake in the oven at 180° for 40-45 minutes. The bread can be enjoyed warm or cold.
