Mediterranean One Pot Pasta

Ingredients
| 1x | large zucchini |
| 1x | eggplant |
| 1x | clove of garlic |
| 1x | onion |
| 800 g | chopped tomatoes |
| 200 ml | stock |
| 1 tbsp. | tomato paste |
| 1 tsp. | olive oil |
| salt, pepper, Italian herbs | |
| 260 g | uncooked pasta |
Instructions
Step 1 of 5:
Peel and dice the onion, and peel and chop the garlic. Wash and dice the courgette & aubergine.
Step 2 of 5:
Heat oil in the Frying Pan and briefly saute the diced onion and garlic.
Step 3 of 5:
Add the aubergine and courgette. Then add the tomato puree and Italian herbs to the Frying Pan as well.
Step 4 of 5:
Deglaze with the stock and tomatoes, and season with salt and pepper.
Step 5 of 5:
Now add the pasta and let everything simmer for approx. 15 min with the Lid on. Serve with Parmesan.
