Parmesan basket

These Parmesan baskets are a lovely idea for the Christmas season when you want something special without the hassle. The crispy Parmesan provides a delightful contrast to the fresh filling of lamb's lettuce, sautéed mushrooms, and egg. A mild, slightly nutty dressing completes the dish. Whether served as an appetizer or a small course at Christmas dinner, these baskets can be prepared in advance and look stunning on the plate. Garnished with salami rosettes, they become a truly festive centerpiece.

Ingredients

120 g fein geriebener Parmesan⁠
FÜR DIE FÜLLUNG:
2 kleine Hände Feldsalat⁠
4 Champignons braun⁠
0,5 gelbe Zwiebel⁠
1 EL Olivenöl⁠
1 Ei⁠
FÜR DAS DESSING:
1 EL Olivenöl⁠
1 EL Walnussöl⁠
1 EL Weißweinessig⁠
1 TL Honig⁠
1 TL Senf⁠
FÜR DIE SALAMIROSE:
6 Scheiben Salami⁠
2 Cornichons⁠
Käse⁠
AUSSERDEM:
Unbeschichtetes Backpapier 15 * 15 cm pro Cup⁠

Instructions

Step 1 of 5:

 

For each cup, place a layer of baking paper in the Frying Pan. Sprinkle half of the Parmesan in a circle as evenly as possible, i.e. there should be no gaps.⁠

Step 2 of 5:

 

Heat the Frying Pan over a medium temperature. Let the cheese melt slowly. Remove the Frying Pan from the hob. Leave the cheese to dry briefly (it should stay bendable but no longer run).⁠

Step 3 of 5:

 

Lift the paper out of the Frying Pan and drape the Parmesan layer over a glass. Shape it and peel off the paper. Leave the Parmesan to dry (it works faster in the fridge).⁠⁠

Step 4 of 5:

 

For the filling, peel the onion and cut it into fine cubes. Clean the mushrooms and lettuce. Slice the mushrooms. Heat olive oil in the Frying Pan. Gently fry the onion for three minutes, add the mushrooms, and fry for 5 minutes until they have cooked down. Boil the egg for 6 minutes, then peel it.⁠

Step 5 of 5:

 

For the dressing, mix all the ingredients together. Fill the cups with lamb's lettuce and mushrooms. Add the dressing and garnish with egg wedges and cress. Tipp: Add salami roses as an extra highlight.
