Steamed redfish fillet with ginger and chili

Ingredients

2 red perch fillets without skin (200 g each, or zander fillet)
salt
mild chilli flakes
1 piece fresh ginger (approx. 15 g), peeled and finely chopped
1 small fresh chilli pepper, deseeded and finely sliced
1 tbsp. lime juice (organic lime)
1 tbsp. soy sauce
200 g Chinese cabbage
1 red bell pepper
3 spring onions
3–4 tbsp. dark sesame oil
3 pinches salt
1 piece lemongrass, with outer leaves removed, slit lengthwise
250 ml water (or use vegetable or fish stock)
½ organic lime, sliced
1 tbsp. chopped coriander
organic lime zest, grated

Instructions

Step 1 of 7: 

 

Wash the fish, pat dry, season lightly with salt, and sprinkle with chilli flakes.

Step 2 of 7: 

 

Mix the ginger with chilli, lime juice, and soy sauce, spread over the fish, and marinate for 1 hour.

Step 3 of 7: 

 

Mix the vegetables in a bowl with the sesame oil and salt.

Step 4 of 7: 

 

Place the lime slices in the Fissler Pressure Cooker (4.5 l) with 250 ml water and lemongrass.

Step 5 of 7: 

 

Fill the vegetables into the Fissler steamer insert, place the steamer insert in the Fissler Pressure Cooker using the tripod, and lay the fish on top of the vegetables in the insert.

Step 6 of 7: 

 

Close the Fissler Pressure Cooker according to the instructions and set the lid's Cooking Indicator with traffic light function to level 1 (gentle cooking level). Bring the pot to the boil over full heat. As soon as the yellow ring appears, reduce the hob temperature. When the green ring is visible, the cooking time of 5 minutes begins. Then release the steam from the Fissler Pressure Cooker according to the instructions and open it.

Step 7 of 7: 

 

Remove the steamer insert, arrange the fish on plates with a little grated lime zest, and serve with the vegetables sprinkled with chopped coriander.

Tipp: 

 

Wild rice or fluffy fragrant rice goes well with this. Alternatively, parsley can be used instead of coriander.
