Radicchio risotto with mountain cheese and walnuts

Ingredients
| 4 tbsp. | butter |
| 2 tbsp. | olive oil |
| 1 | large red onion, cut into strips |
| 2 | radicchio, cut into thin strips |
| 250 g | risotto rice |
| 100 ml | dry red wine |
| 400 ml | vegetable stock |
| 4 tbsp. | walnuts, roughly chopped, toasted if desired |
| 4 tbsp. | mountain cheese, grated |
| 1-2 | thyme sprigs, leaves picked |
| salt & pepper |
Instructions
Step 1 of 4:
Heat 1 tbsp. butter together with the olive oil in the Vitavit® Premium and saute the radicchio (set aside approx. 2-3 tbsp. for garnish) and onion strips for approx. 5-6 minutes. Add the rice and briefly toast it
Step 2 of 4:
Pour in the red wine and vegetable stock. Close the Fissler Pressure Cooker according to the instructions. Set the Cooking Indicator with traffic light function to level 3 (speed setting) and heat. As soon as the green ring appears, the cooking time of 5 minutes begins
Step 3 of 4:
Release steam from the Pressure Cooker according to the instructions and open it. Stir the butter with the grated mountain cheese and thyme into the risotto. Season with salt and pepper.
Step 4 of 4:
Divide the risotto between deep plates and serve sprinkled with the walnuts and, if desired, extra cheese and radicchio
