Quick low-carb quiche with leeks
Leek quiche is a classic of French cuisine. It's quick to prepare and tastes heavenly both warm and cold. Quiche recipes can be wonderfully adapted to personal tastes by selecting different fresh ingredients. For those watching their carbohydrate intake, there are even delicious low-carb versions – the secret lies in the quiche crust.

Ingredients
| 200g | soft butter |
| a pinch of sugar | |
| two to three pinches | salt |
| a pinch of pepper | |
| 1 tsp | Herbs of Provence |
| Zest of half an untreated lemon | |
| 1 | Egg |
| 300g | Spelt flour |
| 1 stalk | leek |
| 3 | medium onions |
| 150g | Lean bacon cubes |
| 400g | cottage cheese (0.8%) |
| 4 | medium-sized eggs |
| 150g | grated cheese (reduced fat) |
| Pinch of salt, pepper | |
| A little nutmeg | |
| Some butter / margarine |
Instructions
Step 1 of 6:
Mix the soft butter with the egg, spices, and sugar until smooth. Then sift the flour and add it to the dough.
Step 2 of 6:
Knead everything thoroughly and roll it into a ball, wrap it in cling film, and place it in the fridge for a few hours. In the meantime, prepare the filling.
Step 3 of 6:
Wash the leek, halve it, and chop it finely. Finely chop the onions as well. Sauté both in a coated Frying Pan. Add the bacon cubes and fry for a few more minutes.
Step 4 of 6:
Mix the cottage cheese with the eggs in a bowl and fold in about 100 grams of the grated cheese. Season with salt, pepper, and nutmeg.
Step 5 of 6:
Once the dough has been in the fridge for a few hours, it can be rolled out. Then place the dough into the quiche tin and prick holes in it with a fork.
Step 6 of 6:
First spread the leek mixture over the dough, then carefully and evenly add the egg mixture. Sprinkle with the remaining cheese before baking everything in the oven at 180° for 30 to 45 minutes. The quiche tastes great both warm and cold.
