Stuffed peppers with minced meat

It's all about the filling
Bell peppers are perfect for meal prepping, as they still taste great the next day. Plus, you can hide a delicious and satisfying filling inside them! Adding different vegetables or a flavorful cheese to the basic ground beef and tomato sauce creates a tasty variety. In no time at all, you can fill several peppers and pop them in the oven. Wrapped in foil, they're easy to take to work, where they only need a quick reheat. Ingredients
| 1 | onion |
| 200g | minced meat |
| 1 tbsp. | olive oil |
| 2 tbsp. | tomato paste |
| 350ml | broth |
| pinch | salt & pepper |
| some chili flakes | |
| some paprika powder | |
| 4 | tomatoes |
| 2 | spring onions |
| ½ bunch | parsley |
| 100g | feta |
| 2 | peppers |
| 2 tbsp. | pine nuts |
Instructions
Step 1 of 5:
Peel the onion, dice it finely, and fry it with the minced meat in olive oil. After a few minutes, add the tomato paste and 100 ml of stock and let it simmer briefly. Season with salt, pepper, a little paprika powder, and chilli flakes.
Step 2 of 5:
Chop the tomatoes, spring onions, and parsley, and let them simmer in the Frying Pan for another 2-3 minutes.
Step 3 of 5:
Remove the Frying Pan from the heat and carefully stir the diced feta into the sauce.
Step 4 of 5:
Wash the peppers and cut off the top quarter. Remove the seeds and fill the pepper with the sauce. Put the top quarter back on, place them in an ovenproof dish, pour in the remaining stock, and bake in the oven at 200 degrees for 30 minutes.
Step 5 of 5:
Put the pine nuts into a Frying Pan without oil and toast them until golden brown. Remove the peppers from the oven, plate them up, and sprinkle with the pine nuts.
