Tofu curry with green asparagus
Today we have a delicious new recipe from @tinastausendschoen for you - tofu curry with green asparagus. This dish was prepared using our Adamant® Comfort pan.

Ingredients
| 250 g | Basmati Rice |
| 200 g | green asparagus |
| 250 g | Tofu, natural |
| 2 tbsp | Olive oil |
| 1 | Onion |
| 3 cloves of garlic | |
| 1 | thumb-sized piece of ginger |
| 1-2 tbsp | red curry paste |
| 350 ml | Vegetable stock |
| 200 ml | Coconut milk |
| 1 can | chickpeas |
| 1 bunch | Coriander |
| 1 | Organic lime juice and zest |
Instructions
Step 1 of 6:
Cook rice according to package directions. Wash asparagus, peel if necessary, and cut into bite-sized pieces. Dice tofu.
Step 2 of 6:
Heat 1 tbsp oil in a pan and fry the diced tofu until crispy, then remove.
Step 3 of 6:
Finely dice garlic, ginger, and onions and add to the pan with the remaining oil and sauté. Add curry paste and asparagus, stir-fry briefly, and deglaze with broth.
Step 4 of 6:
Simmer for approx. 8 minutes.
Step 5 of 6:
Add coconut milk, chickpeas, and lime juice and zest, and simmer again for a few more minutes.
Step 6 of 6:
Stir in tofu, season to taste, and serve garnished with cilantro.
