Ingredients

2 eggs
250 g Greek yogurt⁠
100 ml Milk⁠
1 tsp sugar⁠
1 pinch salt⁠
90 g Flour⁠
1 heaped teaspoon baking powder⁠
2 Apples, cut into wedges⁠
1 tbsp brown sugar⁠
50 ml Apple juice⁠
1 piece Butter⁠
Pistachios⁠

Instructions

Step 1 of 7:

 

Whisk eggs, yogurt, milk, sugar, and salt in a bowl.

Step 2 of 7:

 

Mix flour and baking powder separately, sift into the egg mixture, and gently fold in. If the batter is too thick, add a little milk.

Step 3 of 7:

 

Cover the batter and let it rest for approx. 30 minutes.

Step 4 of 7:

 

Heat butter in a pan and fry the apples.

Step 5 of 7:

 

Reduce the heat, add sugar, caramelize briefly, and deglaze with apple juice. Add butter and glaze. Remove apples from the pan and set aside.

Step 6 of 7:

 

Clean the pan and heat with a little butter.

Step 7 of 7:

 

Pour in the pancake batter, evenly distribute the caramelized apples on top, and sprinkle with pistachios. Flip once the bottom is golden brown and the surface is firm.
