The size of the Frying Pan plays an important role when frying:

• The diameter of the Frying Pan determines how much you can prepare in a Frying Pan. If you prepare food in a Frying Pan that is too small, it may not heat evenly.
• A large Frying Pan, on the other hand, generally requires a larger hob and therefore uses more energy. For small portions, it is often not necessary to use a 28 cm Frying Pan or an even larger Frying Pan such as a Fissler Wok with a diameter of up to 32 cm. A medium Frying Pan with 24 cm is often sufficient.

Frying Pan diameter or cooking surface size – what is measured?

The diameter of the Frying Pan and the cooking surface, also called the pan base, are not the same size: the diameter is measured at the upper inner edge so that Lids fit universally. Because of the shape of the Frying Pan, it is often larger than the cooking surface. With a Frying Pan measuring 20 cm in diameter, you have a cooking surface of approx. 18 cm available.

If you have a conventional hob, you should make sure that the size of the base of the Frying Pan and the size of the selected hotplate match. If the base is too large, the Frying Pan may heat unevenly. In the opposite case, valuable energy is lost.

In an uncoated 24 cm diameter stainless steel frying pan, you can sear meat, poultry, and shellfish until crispy and cooked through. Quickly stir-fried vegetables also turn out perfectly in a stainless steel pan.

For gently frying delicate foods and for slightly sticking foods, a coated aluminum or ceramic pan with a 24 cm diameter is a good choice.
