Sautéing – how to briefly fry the ingredients

Searing and tossing food in a little fat is called sauteing. Because the ingredients are moved around while searing in the Frying Pan and are exposed to intense heat only briefly, they do not burn. This lets you sear meat and vegetables over high heat and give them a beautiful glossy finish.

Sauteing works best when you cut the food into small pieces. If all the ingredients are about the same size, they cook especially evenly.

To make sure everything stays in the Frying Pan during the process, it should have a suitable shape and a well-matched handle. Tossing pans are therefore the ideal choice for this cooking technique.
